Parker Hospitality invites guests south of the border with the debut of its latest buzzing culinary concept, Costera Cocina Tulum.
Indulgent Caribbean lobster is finished with creamed corn and passion fruit mojo.
If there’s one thing you need to know about veteran restaurateur Brad Parker, it’s that he’s a world builder. The Chicago entrepreneur debuted the ultra-popular Hampton Social nine years ago, bringing an authentic taste of the breezy coastal lifestyle to River North.

Diners were so down to rosé all day that the brand has since expanded to 11 locations across the U.S., all while Parker continued to build his empire at Parker Hospitality, with live music hot spot Bassment and Mediterranean steakhouse Nisos Prime. For his latest undertaking, Parker traveled south to find inspiration for the recently debuted Costera Cocina Tulum.
Spaghetti con langosta
Influenced by the amalgamation of flavors and sexy bohemian energy of Tulum, Mexico, the bustling Fulton Market eatery offers a transportive dining journey. “The menu is influenced by the flavors, ingredients and culinary traditions of Tulum, creating a unique dining experience that captures the essence of the region,” Parker says. “[Executive chef Aldo Ayala] has skillfully transformed these inspirations into delicious and innovative dishes that showcase [the region’s] vibrant and diverse culinary heritage.” Immediate menu standouts range from raw bar offerings like the refreshing hamachi tiradito, finished with orange segments and a snappy habanero-watermelon broth; to langosta tacos (which Parker reveals are a personal and crowd favorite); and the 14-ounce bone-in coffee-rubbed filet, which Parker describes as “a mouthwatering dish, expertly seasoned with a rich coffee rub, which adds a unique and robust flavor profile to the tender and juicy meat.”
“The interior design sets the stage for a memorable and immersive journey into the flavors and culture of Tulum,” Parker says, “and it taps into your senses with smell, lighting and music.”
While the restaurant’s cuisine more than lives up to the Fulton Market location, it’s in the alluring vibe that Parker Hospitality’s expertise really shines. Palm trees, stone walkways and custom rope artwork from Querétaro, México—all dimly illuminated and accented by beachy incense—create a tropical essence reminiscent of the coastal locale. “I carefully curated the interior design to enhance the dining experience and reflect the spirit of Tulum,” shares Parker. “The space is designed with a blend of natural elements and contemporary touches, creating a warm and inviting atmosphere. The use of earthy tones, rustic materials and organic textures brings a sense of harmony and tranquility to the restaurant.”

And in true Tulum fashion, Costera transforms into a lively venue Wednesdays through Saturdays. “During these nights, Costera creates an atmosphere that seamlessly transitions into a party.” His advice for late-night diners? “Come prepared to have a high-energy experience.” 850 W. Fulton Market
